it is super simple and great with salads or poultry.
ingredients:
- 1 9 inch pie shell (i usually go for the frozen variety for convenience)
- 1/2 chopped red onion
- 3-4 tomatoes
- cut tomatoes in half and squeeze all the juices out before chopping
- 8 large leaves of basil, sliced
- 2 cups grated cheese (mixture of sharp cheddar and monteray jack)
- 3/4 cup mayonnaise
- 1 teaspoon of hot sauce
- salt (of course) and fresh black pepper
first, you will want to place the frozen pie shell in a 350 degree oven for about 10 minutes until it is golden. while the pie shell in the oven mix together the cheese, mayonnaise, salt and pepper and hot sauce.
once the shell is done, there are just four easy steps:
1. place the chopped onion in the shell
2. add "dry" chopped tomatoes and top with sliced basil
3. spread the cheese mixture across the top
4. cook at 350 degrees for anywhere between 25-45 minutes, then dig in!
